
Healthy Chicken Schnitzel (or Chicken Nuggets)
This healthy, gluten-free chicken schnitzel is golden and crispy on the outside, tender and juicy on the inside. Unlike the traditional kind, it skips the carb-heavy breadcrumbs and deep-frying. Our low-carb, paleo version uses almond meal and sesame seeds for a protein-rich, wholesome crunch and on the table in under 35 minutes. Want healthy chicken nuggets? Ingredients
- 4 chicken breasts butterflied (or bite-sized pieces as “nuggets”)
- 3 tbs extra virgin olive oil ½ for rubbing, ½ for cooking
- 1 tsp garlic powder
- ½ tsp sea salt
- ¼ tsp cracked pepper
- 1 cup blanched almond meal
- 4 tsp sesame seeds
Instructions
- MIX in a small bowl half of the olive oil with the garlic powder, salt and pepper.
- RUB the chicken with the olive oil mixture on both sides.
- SPRINKLE on a plate the almond meal and sesame seeds, and coat both sides of the fillets.
- HEAT a cast iron or ceramic non-stick pan on medium with the oil.
- COOK chicken until the almond crust is brown and turn, ensuring the chicken is cooked through.
- REMOVE from heat to prevent the breast from drying out.
- SERVE with our Creamy Yoghurt Mayonnaise or Green Goddess Dressing or Tahini, Lemon and Parsley sauce.
- Serve with stir-fried greens and steamed or roasted sweet potatoes, sweet potato wedges or sweet potato crisps
- Perfect alongside a classic, big Greek salad
- Cut chicken into bite-size pieces before coating with almond meal to enjoy a version of healthy chicken nuggets both kids and adults will love.
- Use leftovers in fresh, herby salads or wraps.
- If you can, choose organic chicken and/or pasture-raised.
