
Tahini, Lemon & Parsley Dressing

Tahini contains more protein than milk and most nuts. It is a rich source of B vitamins that boost energy and brain function, vitamin E, which protects against heart disease and stroke, and essential minerals such as magnesium, iron, and calcium.
Ingredients
- ⅓ cup of Tahini
- ⅓ cup lemon juice
- ½ cup filtered water for a thicker consistency, add less water
- 2 tbsp Extra Virgin Olive Oil
- 1 cup firmly packed chopped parsley leaves
- ⅛ tsp garlic powder
- ¼ tsp sea salt
Instructions
- COMBINE all ingredients in a blender and blend until smooth.
- STORE the extra dressing in a jar in the refrigerator for up to 2 weeks. Use it on salads, fish, chicken, or roasted vegetables.
- Omit garlic if not tolerated
- For a thicker consistency, add less water
- Serve with vegetable bakes, like Roast Sweet Potato and Broccoli.
