
Poached Eggs with Portobello Mushrooms
This is one of our favourite fatigue-fighting breakfasts. It's incredibly delicious, perfect for a long, lazy Sunday morning or an easy go-to for a nutritious and satisfying way to start a busy day. With garlicky mushrooms, soft poached eggs, and creamy avocado, it’s packed with protein, antioxidants, vitamins and minerals. And the beauty of portobellos is that they are so meaty, they act as your toast without the carbs or sugar spike, so KETO-approved.

Mushrooms are a natural source of fibre, promoting gut health by feeding the “good” bacteria in the intestines and have over 15 vitamins, minerals and antioxidants, including copper, selenium, vitamin D and B6.
Selenium can help prevent cell damage, vitamin D helps with cell growth, and vitamin B6 helps our bodies form red blood cells. All these nutrients help to maintain and boost our immune system by charging up our white blood cells.
Ingredients
- 4 large free-range eggs, pasture-raised
- 4 large portobello mushrooms
- 2 tbs extra virgin olive oil
- 1 tsp mixed Italian herbs
- ¼ tsp onion powder
- ¼ tsp garlic powder
- Season with sea salt and pepper
- 1 ripe avocado, seasoned and mashed
- 1 big handful of baby spinach
Instructions
- PREHEAT oven to 210 degrees (at a higher oven temperature to avoid the mushrooms going watery) and line a tray with a sheet of unbleached baking paper.
- CLEAN mushrooms gently with a damp paper towel; no need to peel. Place mushrooms on the prepared tray.
- MIX oil, herbs, onion, and garlic in a small bowl, pour the mixture over the mushrooms (gill-sides up) and season well with salt and cracked pepper.
- BAKE mushrooms for approx. 15 mins till soft.
- POACH eggs to your liking, while mushrooms are baking. Three minutes usually gives you a perfect runny centre; alternatively, soft-boiled eggs are just as delicious.
- PLATE up by arranging half the spinach and two mushrooms, then top them with the eggs and a generous scoop of mashed avocado. Sprinkle with salt and pepper and enjoy.
- Drizzle over with Green Goddess Dressing or a dollop of Yoghurt Mayonnaise.
- Mushrooms can be baked in advance and reheated in the oven.
- To avoid soggy mushrooms, always bake mushrooms at a higher oven temperature to roast rather than steam.
- Place mushrooms in the sun to absorb more vitamin D before storing them in a paper bag in the refrigerator.
