And what better way than stacking them on a mountain of veggie rice with a side of avocado and a good shake of sea salt and freshly cracked pepper for a quick breaky that is oh-so yum, full of protein and fibre, practically zero carbs and healthy fats to power you through your day.

Ingredients
- 4 large free-range eggs
- 2 tsp olive oil or ghee
- 1 avocado, diced
- Fresh parsley or coriander, optional
Grain-free Rice
- ½ head cauliflower, florets and stalk roughly chopped
- 1 full head of broccoli, florets and stalk roughly chopped
- 2 tablespoons olive oil
- Sea salt and freshly ground black pepper
Instructions
- PULSE the cauliflower and broccoli in a food processor into tiny, fine pieces that look like rice.
- HEAT the oil in a large frying pan or wok over medium heat. Add the cauliflower and broccoli mix and cook for 6 minutes, or until softened. Season well with salt and pepper and set aside.
- HEAT a non-stick pan with the oil or ghee, cook the eggs to your liking. This dish is delicious when the eggs are runny.
- SERVE the cauliflower and broccoli rice on 2 plates, top with eggs and diced avocado, chopped fresh parsley or coriander and a sprinkle of salt and a crack of pepper.
- Add fried shallots, onions or any other stir-fried greens to the Grain-free rice.
- Goes beautifully with a splash of Green Goddess Dressing or a dollop of Yoghurt Mayonnaise.
- Grain-free Rice can be made in a big batch a few days prior and used as a side for curries, like our Beef and Coconut Curry, ragus, salmon, seafood, and protein bowls.
