Ingredients
  

  • 4 large free-range eggs
  • 2 tsp olive oil or ghee
  • 1 avocado, diced
  • Fresh parsley or coriander, optional

Grain-free Rice

  • ½ head cauliflower, florets and stalk roughly chopped
  • 1 full head of broccoli, florets and stalk roughly chopped
  • 2 tablespoons olive oil
  • Sea salt and freshly ground black pepper

Instructions
 

  1. PULSE the cauliflower and broccoli in a food processor into tiny, fine pieces that look like rice.
  2. HEAT the oil in a large frying pan or wok over medium heat. Add the cauliflower and broccoli mix and cook for 6 minutes, or until softened. Season well with salt and pepper and set aside.
  3. HEAT a non-stick pan with the oil or ghee, cook the eggs to your liking. This dish is delicious when the eggs are runny.
  4. SERVE the cauliflower and broccoli rice on 2 plates, top with eggs and diced avocado, chopped fresh parsley or coriander and a sprinkle of salt and a crack of pepper.

Inspiration and tips

  • Add fried shallots, onions or any other stir-fried greens to the Grain-free rice.
  • Goes beautifully with a splash of Green Goddess Dressing or a dollop of Yoghurt Mayonnaise.
  • Grain-free Rice can be made in a big batch a few days prior and used as a side for curries, like our Beef and Coconut Curry, ragus, salmon, seafood, and protein bowls.
