Protein Pancakes

These heavenly protein pancakes are light and fluffy and so much more substantial than the average pancake (thanks, almond flour!). You've got to love that they are low-carb, protein-packed, totally grain and gluten-free, and just as good as any traditional pancake recipe (just ask my hubby)! Top generously with yoghurt, throw on some berries and smother with your favourite nut butter and maybe a teeny-tiny drizzle of maple syrup and finish with a sprinkle of cinnamon. Umm, umm, ummm!

Almond meal is a nutritious, gluten-free alternative to wheat flour. Rich in protein, fibre and a good source of Vitamin E, calcium, and magnesium, encouraging healthy skin and strong bones.
High in monounsaturated fats, almonds and almond products can help lower LDL (“bad”) cholesterol and potentially raise HDL (“good”) cholesterol and therefore contribute to overall heart health.

Ingredients
  

  • 11/2 cups blanched almond flour, levelled measure
  • 1 tsp baking powder gluten-free
  • 1 tsp pure vanilla extract
  • ¾ cup unsweetened almond milk
  • 3 large eggs, pasture-raised
  • Pinch of sea salt
  • Grass-fed butter or ghee for cooking

Toppings

  • A generous dollop of full fat unsweetened Greek yoghurt or coconut yoghurt
  • Fresh fruit in season, like berries, sliced banana
  • Nut butters, like cashew spread, almond butter, tahini
  • Drizzle of pure maple syrup, optional
  • Sprinkle with cinnamon or mixed spice

Instructions
 

  1. MIX the almond flour, baking powder and salt in a medium mixing bowl.
  2. WHISK together the almond milk, eggs and vanilla in a small bowl.
  3. POUR the wet ingredients into the dry ingredients and mix well.
  4. HEAT a little butter or ghee in a nonstick ceramic pan over med-low heat.
  5. POUR ¼ cup measure of batter into the pan.
  6. SERVE warm with your favourite seasonal fruits, nut butters, yoghurt and a sprinkle of spice.
  7. *Note: These are more delicate than flour pancakes, so make them smaller and allow them to spread gently so the middle cooks. They will brown quicker than normal pancakes, so cook on low heat and watch they don’t burn.
