Ingredients
Salad Ingredients
- 4 ripe nectarines, pitted and sliced thinly or chopped
- 6 cups mixed dark leafy greens
- ½ cup walnuts, chopped
- ½ cup Greek feta, diced or crumbled
- Basil Dressing
Basil Dressing Ingredients
- ½ cup fresh basil leaves
- 6 tbs extra virgin olive oil
- 2 tbs Balsamic Vinegar, check label, no preservatives or added sugars
- 1 tsp maple syrup
- ¼ tsp sea salt
- Season well with freshly cracked pepper
Instructions
- MIX gently the green salad leaves and nectarines in a large salad bowl and sprinkle over the nuts and feta.
- BLEND all the vinaigrette ingredients in a high-speed blender and pour over the salad just before serving.
- TOSS gently to not bruise the salad leaves.
- For a complete meal, add diced Chicken or serve alongside Steak, Chicken or Fish.
- Choose ripe, firm-skinned nectarines so they don’t go mushy when tossed through the salad. Can use any stone fruit of choice, a medley of stone fruit or strawberries work wonderfully.
