
Mango and Macadamia Salad with Honey Mustard Dressing

Ingredients
Salad Ingredients
- ¾ cup macadamia nuts, halved
- 2 large mango, cubed
- 1 large avocado, diced
- 1 spring onion, finely sliced
- 6 cups baby spinach or mixed salad greens
- 1 tsp red chilli flakes or 1 fresh chilli, deseeded and finely sliced.
Honey Mustard Dressing Ingredients
- 1 lemon, juiced
- ¼ cup extra virgin olive oil
- 1 tbsp wholegrain mustard
- 2 tsps raw honey
- ½ tsp garlic powder
- ¼ tsp sea salt
- Season well with freshly cracked pepper
Instructions
- TOAST the macadamias lightly in a non-stick pan over low heat, gently shaking the pan to ensure even toasting. There’s no need to add oil, and be careful not to burn them.
- TOSS gently all the other ingredients in a large salad bowl and sprinkle over the nuts once cooled.
- WHISK all the dressing ingredients in a small bowl and pour over the salad and toss gently, not to bruise the salad leaves.
- Add more or less chilli to your liking or omit it.
- Delicious served alongside Steak, Chicken or Fish
- For a protein-packed salad, add diced chicken or Seafood.
