Ingredients
- 5 cups lettuce greens of choice
- 2 medium-large Pink Grapefruits, peeled and chopped
- 1 large avocado, diced
- ½ cup goat’s feta cheese, creamy variety
- ¼ cup pumpkin and sunflower seed mix, raw or toasted
- 2 ½ tbs extra virgin olive oil
- 2 tbsp fresh lemon juice
- Season with sea salt and pepper
Instructions
- MIX all salad ingredients except the feta and seeds in a large bowl.
- TOP with feta and the seeds and combine gently.
- WHISK the oil, lemon juice, and salt in a small bowl and pour over the salad.
- Swap Grapefruits with Oranges if not suitable for those on certain medications.
- Choose a creamier feta rather than a sharper variety.
- Seeds can be swapped with pecans or hazelnut halves. Try toasting and cooling before adding to the salad.
