Grass-fed beef:
  • A better fat profile: Grass-fed beef has a leaner fat content and a more favourable fat profile, with less overall fat than conventional (grain-fed) beef.

Mushrooms:

Ingredients
  

Beef Stroganoff

  • 700 gms grass-fed beef chuck cut into 2-3 cm pieces
  • 1 tbsp extra virgin olive oil
  • sea salt and freshly ground black pepper to season well
  • 1 tbsp grass-fed butter
  • 1 brown onion chopped
  • 10 button mushrooms chopped
  • 1 tsp dried thyme leaves
  • 2 tbsp cassava flour
  • 600 mls vegetable or beef stock
  • cup sour cream
  • Optional: 1tsp dried offal (heart, kidneys, liver)

Cauliflower Mash

  • 1 cauliflower head forets and stem chopped roughly
  • ½ leek chopped
  • 1-2 tbs extra virgin olive oil
  • ½ tsp sea salt
  • fresh pepper to season well

Instructions
 

  1. Season the beef generously with salt and pepper.
  2. Heat oil and butter in a large pan over medium heat.
  3. Brown the beef on all sides, then transfer to a bowl with a slotted spoon.
  4. Add onions, mushrooms, and thyme to the same pan. Cook until softened.
  5. Sprinkle cassava flour over the vegetables and stir to coat evenly.
  6. Return beef to the pan and toss with the vegetables.
  7. Pour in the stock and bring to a gentle boil, then reduce the heat and simmer uncovered for 25 minutes.
  8. While the stroganoff simmers, steam the cauliflower and leek for the mash.
  9. Blend the mash: add olive oil, salt, and pepper to the steamed cauliflower and leek, then blend until creamy. Keep warm.
  10. Just before serving the Stroganoff, add the sour cream and gently stir it through well.
  11. Serve the beef stroganoff over the warm mash and enjoy.
