
Healthy Apple Cinnamon Muffins
These wholesome Apple Cinnamon Muffins are made with real apples, flaxseed, almond meal and cinnamon for a delicious grab-and-go mid-morning snack, packed into lunchboxes, or a nourishing treat enjoyed with a cup of tea.Unlike many store-bought muffins loaded with refined flour, vegetable oils and excess sugar, these muffins are rich in fibre, healthy fats and protein to help support stable energy, gut and brain health.

Ingredients
- 1 cup ground flaxseed flaxmeal
- 1 cup almond flour finely ground almond meal
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- A pinch of salt
- ½ cup butter, melted (or 1/3 cup extra virgin olive oil, but add an extra tbs water to mixture)
- 4 large eggs room temperature
- ⅓ cup coconut or rapadura sugar
- ⅓ cup full fat Greek yoghurt
- 2 tbs water
- 2 apples cored and chopped + 1 small additional apple to decorate on top.
Instructions
- Preheat oven to 170℃ and line a 12-cup muffin tray with muffin liners.
- Combine the dry ingredients in a large mixing bowl add the flax meal, almond flour, baking powder, baking soda, cinnamon, and salt.
- Whisk the wet ingredients in a separate bowl add the melted butter (or oil), eggs, sugar, yoghurt and water.
- Add the wet to the dry ingredients and stir well. Fold through the diced apple.
- Pour the mixture into the muffin cases.
- Add a couple of thin-sliced apple pieces on top and sprinkle with cinnamon. Bake for 20 minutes, or until golden.
- Remove from the oven and cool on a wire rack.
- Prefer a smoother texture? Grate the apple instead of chopping for extra-soft muffins little ones will love.
- Add a sprinkle of extra cinnamon and coconut sugar on top before baking for a delicious café-style finish.
- These muffins freeze really well — perfect for healthy lunchboxes and busy mornings.
