Ingredients
  

  • 8 pasture-raised eggs

Instructions
 

  1. In a large bowl, whisk the eggs.
  2. Gradually add buckwheat flour and milk, alternating ½ cup at a time, whisking continuously until you reach a smooth, pourable pancake batter.
  3. Heat a non-stick or ceramic pan over medium heat and add a small knob of grass-fed butter.
  4. Pour one ladle of batter into the pan and allow mixture to spread the width of the pan evenly.
  5. Cook until bubbles form and the edges begin to set, then flip and cook until golden on both sides.
  6. Re-butter the pan between each pancake.
  7. Serve warm and enjoy with your favourite, nourishing toppings like nut butters or tahini. Fresh fruit like, berries and sliced banana. Coconut flakes, crushed nuts and seeds. Greek or coconut yoghurt. Sprinkle with cinnamon or mixed spice. A drizzle of raw honey or maple (optional).
