Ingredients
  

  • 600 g lean beef mince
  • 1 brown onion finely chopped
  • 2 cloves garlic crushed or 1 tsp garlic powder
  • 1 small zucchini grated
  • 1 cup mushrooms finely chopped
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried mixed herbs
  • Salt and pepper to taste
  • Sourdough burger buns to serve (for a gluten-free option, enjoy bun-less or serve on a baked sweet potato with all your favourite burger toppings)

  • Lettuce or leafy greens
  • Pickles or Gherkins or Kraut

Instructions
 

  1. Add the lean beef mince, onion, garlic, zucchini, mushrooms, herbs, extra virgin olive oil, salt and pepper to a large bowl.
  2. Mix well until everything is combined.
  3. Shape the mixture into burger patties.
  4. Heat a pan over medium heat with a little extra virgin olive oil.
  5. Add the patties to the pan and gently flatten them slightly with a spatula to help them cook evenly.
  6. Cook for a few minutes on each side until golden, crispy on the outside and cooked through.
  7. Set up your toppings bar with buns, cheese, tomato, leafy greens, pickles, mayo and sauces.
  8. Let everyone build their own burger and enjoy.

Inspiration and tips

  • Delicious with Creamy Yoghurt Mayo
  • Finely chop or grate the veggies so they blend seamlessly into the patties.
  • If your mixture feels too wet, add a small handful of breadcrumbs, almond meal or oats to help bind it.
  • Double the batch and freeze uncooked patties between sheets of unbleached baking paper for an easy future meal.
  • Alternatively, cook the patties first, allow them to cool completely and freeze. Simply reheat in the oven when needed for a quick dinner that’s fast, but not fast food.
  • Serve with a big salad, roasted sweet potato chips or veggie sticks for an easy balanced meal.
