Chia seeds are rich in fibre to support healthy digestion, protein-packed to help balance insulin levels and contain essential minerals like magnesium and zinc for hormone production and function.

Ingredients

  • 2 cups canned organic light coconut milk, use full-fat if making it for dessert
  • Pinch sea salt
  • 1 tsp pure vanilla extract, check label for added sugars
  • 1 tsp true cinnamon
  • ½ cup white chia seeds
  • tbs pure maple syrup or 2-3 pinches of pure stevia powder
  • 1 large banana
  • 4 tbsp collagen powder

Toppings

  • Top with full-fat coconut or Greek Yoghurt
  • Sliced banana
  • Sprinkle with coconut flakes and cinnamon
  • Optional additions: Top with nuts and seeds of choice

Instructions
 

  1. BLEND all the ingredients in a food processor or blender (ensuring no lumps).
  2. POUR into 4 small bowls or glasses and refrigerate overnight (or until set).
  3. TOP with sliced banana, coconut flakes, a dollop of unsweetened coconut yoghurt or Greek yoghurt, and a sprinkle of cinnamon.

Inspiration and tips

  • This is an ideal meal-prep healthy recipe. One batch can last for four days. Store in airtight containers or jars in the refrigerator.
  • Chia is high in fibre, so consuming it every second day may be better for some.
  • When increasing fibre in your diet, make sure to drink enough water! Staying hydrated may help avoid issues like constipation on a high-fibre diet.
  • Swap collagen powder with a plant-based protein powder or add both for a protein-packed pudding.
  • For a vegan version, use marine collagen.
  • If using Greek Yoghurt, the recipe is no longer dairy-free.
  • In this recipe, light coconut milk has been used; full-fat may be more indulgent if making it for dessert.
