Ingredients
  

Skewers

  • 600 gas lean beef steak cut into 1.5 cm cubes
  • 1 large zucchini cut into ½ cm rounds
  • 1 red capsicum cut into ½ cm pieces
  • 1 green capsicum cut into ½ cm pieces
  • 1 red onion cut into wedges
  • 16-20 cherry tomatoes
  • wooden or metal skewers *See tip

For the marinade:

  • ¼ cup extra virgin olive oil
  • 3 tbsp coconut aminos
  • 2 tbsp balsamic vinegar (read labels, no colours)
  • 1 garlic clove minced
  • 1 tbsp thyme dried
  • 1 tsp Sriracha (read labels, no preservatives or emulsifiers)
  • 1 tsp sea salt
  • ¼ tsp cracked pepper

Instructions
 

Marinade:

  1. Combine all ingredients in a large bowl and whisk until well combined.
  2. Place the beef in the bowl and coat well with the marinade. Cover and place in the fridge for a minimum of two hours or overnight.

Skewers:

  1. If you are using wooden skewers, submerge them in water for one hour, to prevent the wood from catching on fire on the grill.
  2. Before making the skewers, heat the grill.
  3. To assemble the skewers, thread one piece of beef and continue rotating with the vegetables and meat.
  4. Grill skewers 3-4 minutes on each side. Once cooked, transfer to a plate and allow to rest for five minutes before enjoying!
