
Coconut Almond Nourish Cookies

- 2 cups almond meal
- 1 cup coconut, shredded
- 2 tsp sesame seeds
- 1 tsp cinammon
- ¼ cup pure maple syrup
- ¼ cup extra virgin olive oil
- ½ tsp bicarb soda (gluten and aluminium free)
- 2 tbsp water
Instructions
- Line a baking tray with unbleached baking paper
- Preheat oven to 150℃
- In a large bowl, add dry ingredients and mix well
- In a small saucepan heat gently the oil, bi carb and maple syrup, until mixture froths a little
- Mix the wet ingredients with the dry and add the water. Add a little more water if needed until the dough is holding together
- Form small golf sized balls with a spoon, approximately 16
- Bake for 16-18mins or until golden.
- Swap maple syrup for raw honey.
- Add any sweet spices like ginger, cardamom, mixed spice & nutmeg.
- Swap sesame seeds for hemp, pumpkin or sunflower seeds.
- Store in an airtight container or freezer-friendly.
