Our choc bounty chia pudding is a great way to start the day, packed with antioxidants, omega-3s, and fibre, which will keep you fuller for longer and help avoid overeating throughout the day, and your gut and metabolism will thank you for it!

Cacao is the ultimate mood food with compounds that promote mental and emotional wellbeing. Cacao can help to ease anxiety as well as enhance memory and reduce mental fatigue.

- 4 tbsp organic chia seeds
- 2.5 cups organic coconut milk, canned check labels
- 3 serves vanilla protein powder, plant-based or whey, check label usually 3tbs per serving
- 2 serves collagen powder, check label usually 1tbs per serving
- 4 tbsp organic cacao powder
- 2 tsp cinnamon
- 1 large banana
Toppings per serve
- ¼ cup unsweetened coconut yoghurt or full-fat Greek yoghurt
- 1 tbs coconut flakes, giving the bounty taste
- ¼-1/3 cup fresh organic blueberries
Instructions
- BLEND chia seeds and milk in a blender, ensuring no lumps.
- ADD all the other ingredients and blend until smooth.
- POUR into 4 bowls, glasses or jars and refrigerate overnight, or until set.
- Once set, TOP with fresh berries, coconut flakes and yoghurt.
- Toppings can include nuts, seeds and fresh berries of choice.
- It’s perfect to make more for a ready-to-go breakfast or anytime meal. It can be stored in the fridge for a few days.
- Chia is high in fibre so best consumed every second day.
- Check labels and ensure your coconut milk does not have emulsifiers or added preservatives.
- Swap plant-based vanilla protein powder with whey protein but no longer dairy free.
- Swap coconut yoghurt for Greek Yoghurt but no longer dairy free.
- If pudding is too runny, reduce the volume of milk slightly.
