Nutritional Profile

Ingredients
  

  • 1 tbsp extra virgin olive oil
  • 1 onion finely diced
  • 3 garlic cloves minced (or 1 tsp garlic powder)
  • 2 tbsp fresh ginger grated (or 1 tsp ground ginger)
  • 1 tbsp mild curry powder
  • 1 tsp ground turmeric
  • 1 tsp sea salt
  • cracked black pepper to taste
  • 900 g chicken thighs cut into bite-sized pieces (fat trimmed)
  • 3 tbsp tomato paste
  • 1 x 400ml tin light coconut milk
  • ¼ cup almond meal helps thicken + adds healthy fats

Optional veggie boost:

  • 1 cup sweet potato cubed
  • 1 zucchini grated
  • 1 carrot sliced

To serve:

  • Steamed rice (basmati, jasmine, brown or cauliflower rice) or quinoa

Instructions
 

  1. Heat olive oil in a pan (or slow cooker with sear function).
  2. Add onion and cook until soft and translucent.
  3. Stir in garlic, ginger, curry powder, turmeric, salt and pepper. Cook until fragrant.
  4. Add chicken and coat well in spices. Lightly brown.
  5. Transfer to a slow cooker or oven-safe dish (for slow cooking). Leave in the same pan if opting for the quick stove-top method.
  6. Stir through tomato paste, coconut milk and almond meal until combined.
  7. Add optional vegetables.

Cook:

  1. Slow cooker: 2 hours on high or 4–5 hours on low or Oven: 160°C for ~2.5–3 hours or Quick Stove Top: Simmer for 25mins till chicken is cooked through

To Serve:

  1. Serve over rice, cauliflower rice or quinoa.
