This Healthy Burrito Bowl is a wholesome, Mexican-inspired meal the whole family can build their own way. Choose turkey or lean beef mince, pile on fresh salad, avocado and your favourite toppings, then serve with organic corn chips, roasted vegetables or quinoa, or roll it all up in Mountain Bread for an easy burrito. Ingredients
Burrito Mix
- 1 large brown onion diced
- 2 cloves garlic crushed or 1 tsp garlic powder
- 500 gms turkey mince free range
- 1 tbs extra virgin olive oil
- 1 stick celery diced
- 1 ½ tsps. curry powder
- 1 tsp cumin grounded
- 1 tsp cinnamon
- 1 tsp mixed dried herds
- 1 tbs bone broth concentrate dissolved in ¼ cup of boiling water
- ¾ cup passata
- 3 tbs tomato paste heaped
- ½ cup of black beans or red kidney beans
- ½ tsp sea salt
- A good amount of fresh cracked pepper
Toppings
- 1 Avocado Mashed and seasoned well with salt and pepper
- 2 cups iceberg lettuce or leafy dark greens shredded
- ½ cucumber diced
- 1 tomatoe diced
- ½ cup cheese grated (optional)
- ½ cup sour cream or unsweetened greek yoghurt (optional)
Choose Your Base
- 2 sweet potato halved and baked
- 1-2 heads broccoli chopped and baked
- 2-3 cups Quinoa and Brown Rice/White Rice (as an alternative base)
Instructions
- HEAT a large nonstick ceramic or cast iron pan and on medium heat, sauté the onions, celery and garlic in the oil.
- ADD all the spices and bone broth and heat till fragrant.
- ADD the turkey and break up the mince and brown well, stirring through the spices
- ADD the beans, passata, paste and turn the heat to low and simmer for 15mins till the onions are soft and the meat is well cooked.
