Ingredients
- ½ cup shredded coconut
- 2 bananas mashed
- ¼ cup maple syrup or raw honey
- 1 cup raw nuts
- ½ cup sultanas and goji berries or any chopped dried fruit, preservative and seed-oil free
- ½ cup boiling water
- 2 free-range eggs lightly beaten
- 2 cups organic quinoa flakes
- 1 tbsp sesame seeds
- 1 tbsp hemp seeds
- 1 tsp mixed spice
Instructions
- Preheat oven to 140°C fan-forced. Line a deep slice tin with bleach-free baking paper.
- Place the dried fruit in a bowl, pour over the boiling water and soak for 10 minutes. Allow to cool.
- Add the nuts to a blender and pulse until roughly chopped. Keep them nice and chunky for texture.
- Add the quinoa flakes, coconut, mashed banana, maple syrup, eggs, seeds, spice, chopped nuts and soaked fruit along with its soaking liquid to a large mixing bowl.
- Mix well until everything is well combined.
- Transfer to the prepared tin and press down firmly with the back of a spoon to create a smooth, even surface.
- Bake for approximately 25 minutes, or until golden.
- Remove from the oven and allow to cool completely in the tin before slicing into even bars.
- Store in an airtight container or freeze for an easy grab-and-go snack.
Use what you have in the pantry! These bars are really easy to mix and match depending on what you have on hand.
- Use any raw nuts, including almonds, cashews, walnuts, pecans, Brazil nuts or pistachios.
- Use any dried fruit you love — sultanas, goji berries, chopped apricots, dates or figs. Look for preservative and seed oil-free where possible.
- Swap the hemp or sesame seeds for pumpkin, sunflower seeds or grounded flaxseed.
- Add any spices you like cinnamon or ginger, if you don’t have mixed spice.
- For school lunchboxes, make them nut-free by replacing the nuts with pumpkin and sunflower seeds.
- Make a double batch and freeze, so you always have lunchbox fillers.
