
Carrot, Fig & Almond Salad
Our Carrot, Fig & Almond Salad is a vibrant, feel-good dish that’s as easy as it is delicious. Sweet grated carrots meet plump Turkish figs with garden fresh mint leaves, and golden toasted almond slivers to add a little crunch. Fabulously fresh ingredients all brought to life with a lemony drizzle. Bright and full of flavour, it’s the perfect pop of colour and sweetness to light up any plate.

The humble carrot is often overlooked, but it’s a quiet powerhouse when it comes to nutrition. Rich in beta-carotene, vitamin K1, potassium, and antioxidants, carrots deliver big health benefits with very few calories. When eaten raw, they’re also low on the glycemic index, making them a smart choice for steady energy. What’s more, carrots are packed with soluble fibre, especially pectin which feeds the good bacteria in your gut. This type of fibre not only supports digestion and regularity but also helps reduce blood cholesterol by limiting its absorption in the digestive tract.
Ingredients
- 8 large carrots, peeled and grated
- 1 bunch of fresh mint, chopped
- ⅓ cup plump Turkish figs, chopped (no oils, no preservatives)
- ⅔ cup almonds, slivered and lightly toasted
- 4 tbs extra virgin olive oil
- ½ cup lemon juice, freshly squeezed
- ½ tsp sea salt
- Season with cracked pepper
Instructions
- COMBINE and whisk lemon juice, oil and salt.
- TOSS all other ingredients in a large salad bowl.
- POUR dressing over the top, season well with pepper and give it a final toss.
- Substitute figs with oil-free sultanas or raisins
- Substitute slivered almonds for whole almonds, pecans or hazelnuts and chop before toasting.
- If not serving immediately, leave the mint out and add just before serving.
