The spices used in this delicious sweet nut mix, such as cinnamon, mixed spice, turmeric, and ginger, aid in controlling blood sugar, boosting immunity, and providing numerous antioxidant benefits.
Ingredients
- 2 cups spray-free raw nuts, almonds, pistachios, hazelnuts, pecans, walnuts
- 4 tsp extra virgin olive oil
- 2 tsp true cinnamon
- ½ tsp mixed spice
- ¼ tsp turmeric grounded
- ¼ tsp ginger grounded
- 3-4 dried figs, chopped into small pieces
- ½ tsp coconut sugar, optional
Instructions
- PREHEAT oven to 180ºC
- TOSS nuts in 2 tsp of oil and transfer onto a baking sheet, spread out evenly.
- ROAST for 5-10 mins to toast, be careful not to burn.
- COMBINE all other ingredients except the oil in a bowl.
- TOSS roasted nuts in the spice mixture and add the remaining oil while the nuts are warm.
- SERVE cool as nuts will crunch up, and store remaining for a quick, wholesome and tasty snack.
- Store in a glass, air-tight jar at room temperature for up to 1 week
- Try any combination of raw nuts, best to avoid peanuts and cashews
- Try adding seeds like sunflower, pumpkin seeds
- Play with the spices, if you prefer the nuts to be sweeter, swap out turmeric and ginger for allspice and nutmeg
- Create a delicious trail mix and add oil-free dried fruits and/or dark chocolate chips.
