Ingredients
  

  • 1 tbsp extra virgin olive oil
  • 500 grams grass-fed lamb mince
  • 1 brown onion, chopped
  • 2 garlic cloves, minced
  • 1 zucchini, grated
  • 8 button mushrooms, diced
  • 2 tsp mixed dried herbs
  • 1 tsp ground cinnamon
  • ½ cup organic passata (tomato puree)
  • 1 tbsp beef bone broth concentrate
  • 3 tbsp tomato paste
  • 1 tsp sea salt
  • Season with cracked pepper

Optional:

  • 1 tsp dried offal powder (heart, liver, kidneys, spleen)
  • ¼ cup kalamata olives optional

Instructions
 

  1. HEAT oil and fry the onion in a nonstick ceramic or stainless steel frying pan on medium heat till transparent.
  2. COOK garlic, mushrooms, and zucchini until tender.
  3. ADD the lamb mince and brown.
  4. STIR in the bone broth, herbs, salt, cinnamon, passata and tomato paste and simmer for 20 mins or until the Ragu thickens.
  5. SERVE with cauliflower and parsnip mash. Make a well and spoon the Ragu in the centre. (link to recipe)

Inspiration and tips

  • Swap veggie mash with gluten-free pasta like Brown Rice pasta or Quinoa varieties (no longer grain-free)
  • Delicious spooned over any steamed root vegetables and steamed greens
  • Serve with freshly grated Parmesan cheese (no longer dairy-free)
  • Make a healthy Sheppard’s pie, pour Ragu into individual bowls and spread a delicious potato mash over the top.
  • Swap Lamb mince with Turkey Mince, maybe a little drier in texture, so add another ½ tbs olive oil.
