Cauliflower Rice (Grain-free)

Cauliflower rice is the best solution if you are looking for a gluten-free alternative to higher-carb rice. When made right, you will be amazed at how delicious it is served with anything and everything you usually serve with rice!
This is always on hand, ready-made in my fridge to reheat and serve with curries, stir-fried meats, poultry and oven-baked salmon and cold as Substitute for sushi rice.

Cauliflower Rice (Grain-free)

Cauliflower rice is a fantastic gluten-free, low-carb alternative to regular rice — and when made well, it’s seriously tasty. Light, fluffy, and versatile, it pairs beautifully with everything from curries and stir-fries to baked salmon. I always keep a batch ready in the fridge to reheat or enjoy cold — even as a sushi rice substitute!

Ingredients
  

  • 1 head of cauliflower, florets and stalk roughly chopped
  • 2 tbsp coconut oil or extra virgin olive oil
  • Sea salt and freshly ground black pepper

Instructions
 

  1. PROCESS the cauliflower in a food processor and pulse into tiny, fine pieces that look like rice.
  2. HEAT oil in a large frying pan over medium heat. Add the cauliflower and cook for 6 minutes, or until softened.
  3. SEASON well with salt and pepper.
