Nutritional Profile
Wholesome Human Hero Ingredient: Grass-fed Beef and Konjac Noodles
Grass-fed beef is a complete protein, providing all nine essential amino acids. Adequate protein is vital for building and repairing tissues, including muscles, and plays a crucial role in maintaining a healthy body across all age groups, from growing children and is especially important for preventing muscle loss and sarcopenia in older adults.
Beef is also rich in zinc, iron, selenium, B vitamins, and L-Carnitine, which aids fat metabolism by helping transfer fats into cells for burning. Additionally, protein is the most satiating macronutrient, helping to curb cravings, reduce overeating, and support weight management.
Konjac noodles mimic the texture of higher-carb noodles without the gluten, glucose spike, or calories. They’re high in fiber and glucomannan, which acts as a prebiotic to support the growth of beneficial gut bacteria, promoting overall gut health and helping regulate bowel movements.
Ingredients
- 500 gms lean grass-fed beef, cut into thin strips or cubed
- 3 cloves garlic, minced or 1 tsp garlic granules or powder
- 1 tsp ginger, minced or ½ tsp ground ginger
- 1 tsp sea salt
- ¼ tsp cracked pepper
- 1 tbsp avocado oil or cold-pressed coconut oil
- ¼ cup coconut aminos
- 1 ½ tsp sesame oil
- ½ tsp mild chilli flakes, (substitute with med or hot if you love spicy food)
- ⅓ cup water
- 4 cups broccoli florets not too big
- 1 large red onion, sliced
- 1 large red capsicum, sliced
- 6 button mushrooms, sliced
- 11/2 cups frozen or fresh green beans
- 400 gms Konjac Noodles
Instructions
- COMBINE in a large mixing bowl the garlic, ginger, salt, and pepper and stir. Then add the beef and mix until the meat is well coated.
- HEAT a wok or cast iron, or ceramic non-stick pan over medium-high heat. Once hot, add a tablespoon of oil and then add the beef. Cook the beef until browned. Once browned, remove the steak from the pan and set aside. Leave the delicious juices in the pan.
- BROWN the beef. Once browned, remove the steak from the pan and set aside. Leave the delicious juices in the pan.
- PREPARE the sauce: In a small bowl, add the coconut aminos, sesame oil, and chilli flakes and mix well.
- ADD to the same pan, the water and all the vegetables. Cook the vegetables to your liking, around 6-8 minutes, depending on the size of the broccoli florets.
- PREPARE your noodles: Rinse noodles well before heating in boiling water for 2 minutes, then drain well.
- COMBINE the steak and any juices back to the pan with the heated noodles and add the stir-fry sauce. Stir and cook for another 3 minutes to allow the noodles to absorb the flavours.
- SERVE in 4 bowls. ENJOY!
- Swap the Konjac noodles for cauliflower rice (recipe link) or kelp noodles
- If intolerant to nightshades, swap the red capsicum for carrots
- Make it kid-friendly and serve with jasmine rice or brown rice noodles, but no longer grain-free.
- Double the recipe and make it as part of your weekly meal prep for quick mid-week lunches or dinners, ready to heat and eat.
