Ingredients
- 2 cups fine almond flour
- 6 tbsps maple syrup
- 2 tsp mixed spice
- 2 tbsps water
Optional
- 1/3-1/2 cup dark chocolate (melts or choc chips)
Instructions
- Preheat oven to 160℃. Line a large baking tray with baking paper. Set aside.
- In a mixing bowl, combine almond flour, maple syrup, spice and water until the dough is wet and sticky. Roll into a large ball.
- Cut 2 large sheets of parchment paper. Lightly spray the paper with coconut or olive oil.
- Place one sheet of oiled paper (oil side up) on the bench, place the dough down on the sheet with the second sheet over the top and press the dough out.
- Using a rolling pin, roll the dough evenly to 4mm thickness.
- Cut your cookies with cookie cutters (choose your favourite shapes).
- Place shapes onto the prepared tray and bake till golden brown.
- Remove from oven, allow to cool.
- Optional: Melt chocolate and decorate or dip cookies. Place cookies in the freezer to set.
